Cranberry Brie Crostinis

The crostini is one of the easiest things you can make in your kitchen.

The word literally means “little toasts” and it doesn’t get much more complicated than a drizzle of olive oil and a short journey to the oven.


Cranberry Brie Crostinis

These are without a doubt my new favorite holiday appetizer. Their bright red and green color would be absolutely perfect for party trays, and the combinations of sticky sweet cranberries and brie offset with the fresh thyme just scream holiday time!


So as the festive season approaches, there's no better way to delight your taste buds and impress your guests than with a festive and mouthwatering appetizer. Serve these bites at your next gathering, and watch as your guests savor a perfect blend of sweet, savory, and crunchy goodness that captures the essence of the holidays. Ingredients

4 tablespoons olive oil

12 pieces of baguette, sliced thin

1/2 cup fresh cranberries

1 tablespoon sugar

12 slices triple cream brie

fresh thyme sprigs


Directions

  1. Preheat oven to 400 degrees.

  2. Line a sheet pan with parchment paper and drizzle olive oil on top.

  3. Spread the cranberries out on top and sprinkle the sugar on top of the cranberries. Toss to coat.

  4. Bake cranberries for 10 minutes.

  5. While they are baking slice your baguette and place 12 pieces onto another sheet pan lined with parchment paper and drizzle with olive oil.

  6. Place crostinis in the oven and flip after 4 minutes and return to the oven for another 4-6 minutes, or until crispy and golden.

  7. At this point, the cranberries should be popped open with juices running out. Remove both the cranberries and baguette slices from the oven.

  8. Top each crostini with a slice of brie and a spoonful of cranberries.

  9. Garnish with fresh thyme.


Can be served while the cranberries are still warm, or you can make the components ahead of time. The cranberries can be chilled overnight and the crostinis can be kept in a zip-lock container or bag. Simply assemble and serve at room temperature when you're ready.
