These sliders are packed full of nutrient-rich superfoods.

Since purchasing a new grill this summer I have been using it at least 3-4 times a week grilling anything from skewers, chicken, seasonal vegetables, and seafood. I have also been doing a bunch of different burgers but keep coming back to these kale and feta turkey burgers. Even though you can’t go wrong with classic beef burgers I like to switch things up every now and then and try various combinations of burgers, toppings, and buns. This creation is one of my top favorite ways to make a burger with a quick and simple sweet potato bun with a "Healthy-ish" twist.
Ingredients
Burgers
1-pound lean ground turkey
2 tablespoons of minced garlic (I use the squeezable kind.)
1 cup of crumbled feta cheese
3 cups of fresh kale chopped into small pieces
For the sweet potato buns:
3 medium sweet potatoes
olive oil
salt and pepper
Toppings
1 cup arugula
2 sliced tomatoes
Directions
Preheat grill to medium-high heat. (If you don’t have a grill you can cook in a pan on your stovetop too.)
In a large bowl add lean ground turkey meat, garlic, feta cheese, chopped up kale, salt, and pepper, and mix everything together.
In another bowl mix the sweet potato rounds with olive oil and salt and pepper.
Place sliders and sweet potato “buns” onto the grill at the same time. (You can also roast the sweet potato rounds in the oven at 350 degrees until cooked through.)
Cook the burgers for about 4-5 minutes on each side and the sweet potato rounds for about 3-4 minutes on each side.
Assemble the sliders by placing the cooked turkey slider on the grilled sweet potato rounds, then top with arugula and sliced tomatoes.
Serve with ketchup, mustard, and/or mayo if desired.
