My nephews couldn't wait to use the mini pumpkin-shaped waffle iron we bought and loved these waffles. You can use any shaped waffle iron, they'll taste just as good!
Ingredients
2 eggs
3/4 cups milk
3 Tablespoons melted butter
2/3 cup pumpkin puree
2 teaspoons vanilla
1 cup whole wheat flour
2 teaspoons baking powder
2 teaspoons sugar
1/4 teaspoon salt
1 teaspoon pumpkin pie spice
Directions
Preheat the waffle iron.
In a large bowl beat eggs.
Add the milk, melted butter, pumpkin puree, and vanilla and combine until smooth.
In a small bowl combine the flour, baking powder, sugar, salt, and pumpkin pie spice.
Add the dry ingredients to the wet ingredients and stir lightly until combined.
Spoon waffle batter onto the hot waffle iron. (For mini pumpkins, use about 2 Tablespoons of batter to fill the waffle maker without overflowing)
Cook until golden brown. Enjoy!
