Purple potatoes have great taste and texture and, mixed with pesto, they make a surprisingly good pizza.
Prep Time: 10 minutes
Bake Time: 15 minutes
1 package of store-bought pizza crust
1 medium purple potato, sliced
1/2 cup shredded mozzarella cheese8 slices fresh mozzarella
1 cup pesto
1 tablespoon olive oil
Preheat oven to 350 degrees.
Roll out pizza dough.
Drizzle 1 tablespoon olive oil on a parchment-lined baking sheet and set rolled-out pizza dough on top.
Spread pesto on top and save some to dollop on after being cooked.
Sprinkle with mozzarella and place mozzarella slices on top.
Layer the purple potatoes all over.
Bake until edges are lightly browned and cheese is melted - 15-20 minutes.
