Sweet Potato, Chorizo and Black Bean Chili

This recipe takes chili to the next level by changing up the flavors and adding in sweet potatoes.

Sweet potato, chorizo and black bean chili

Chili is one of my all-time favorite, quick and easy dishes to make. You may think this chili would be super sweet, but with a perfect blend of spicy chorizo and chili powder its packed with flavor and a kick and perfect to warm up your winter evenings.


Whether you're hosting a gathering or just craving a comforting bowl of chili, this recipe is sure to satisfy. Give it a try and enjoy the comforting warmth and bold flavors of this Sweet Potato, Chorizo, and Black Bean Chili.


Ingredients

2 pounds spicy chorizo, casings removed

1 large onion, chopped

2 tablespoons garlic, minced

4 tablespoons olive oil

2 cans black beans, drained and rinsed

4 cans diced tomatoes

2 cups beef broth (May want more if you want your chili not so thick.)

3 large sweet potatoes, peeled and cubed

4 tablespoons tomato paste

2 (4oz. cans) jalapeños, diced

1 tablespoon chili powder

1 tablespoon cumin

salt and pepper



Directions

  1. In a large pot, heat 2 tablespoons olive oil over medium heat.

  2. Add the chorizo (uncased) and cook through.

  3. Drain any of the fat and set aside.

  4. In a large pot, heat 2 tablespoons olive oil over medium heat.

  5. Add the onion, garlic and sweet potatoes and cook for 10-15 minutes.

  6. Add in the black beans, diced tomatoes, tomato paste, broth, jalapeños, chili powder and cumin. Bring to a simmer and cook until potatoes are tender.

  7. Serve hot and add salt and pepper if needed.

  8. Optionally, garnish with chopped cilantro, grated cheese, or a dollop of sour cream.
