Chili is one of my all-time favorite, quick and easy dishes to make. You may think this chili would be super sweet, but with a perfect blend of spicy chorizo and chili powder its packed with flavor and a kick and perfect to warm up your winter evenings.

Ingredients
2 pounds spicy chorizo, casings removed
1 large onion, chopped
2 tablespoons garlic, minced
4 tablespoons olive oil
2 cans black beans, drained and rinsed
4 cans diced tomatoes
2 cups beef broth (May want more if you want your chili not so thick.)
3 large sweet potatoes, peeled and cubed
4 tablespoons tomato paste
2 (4oz. cans) jalapeños, diced
1 tablespoon chili powder
1 tablespoon cumin
salt and pepper
Directions
In a large pot, heat 2 tablespoons olive oil over medium heat.
Add the chorizo (uncased) and cook through.
Drain any of the fat and set aside.
In a large pot, heat 2 tablespoons olive oil over medium heat.
Add the onion, garlic and sweet potatoes and cook for 10-15 minutes.
Add in the black beans, diced tomatoes, tomato paste, broth, jalapeños, chili powder and cumin. Bring to a simmer and cook until potatoes are tender.
Serve hot and add salt and pepper if needed.
Optionally, garnish with chopped cilantro, grated cheese, or a dollop of sour cream.
