Packed with the bold flavors of a taco, this soup is a crowd-pleaser that's as easy to make as it is to devour. It’s easier than easy and can be thrown together in 10 minutes. Brown the beef, or ground turkey if you wish. Add cans of beans, corn, and the taco seasoning of your choice, then throw it all in a slow cooker or cook on top of the stove.
Chili, originated in San Antonio around 1828 when Texas was still part of Mexico. Though there's much speculation about earlier examples including the Aztecs making a stew of conquistadors they’d vanquished. It then slowly spread north, culminating with a San Antonio chili stand at the 1893 Chicago World's Fair which introduced much of the world to this wonderful delicacy.
So whether you're hosting a game night, a casual gathering, or just want a comforting weeknight meal, this Easy Taco Soup is sure to be a hit. It's a bowlful of joy that captures the essence of a taco fiesta in every spoonful.
1 pound lean ground beef or turkey
2 tablespoons olive oil
1 large onion, diced
3 tablespoons taco seasoning, or I packet of store-bought taco seasoning
2 tablespoons garlic, minced
1 can (15 oz) black beans, drained
1 can (15 oz) diced tomatoes, undrained
1 can (15 oz) corn, drained
2 cans (4 oz) diced green chilies
2 cups beef broth
salt and pepper
In a large pot over medium heat, cook the ground beef or turkey until browned.
Drain any fat and put back into the pan and add diced onions and minced garlic, sautéing until the onions are translucent.
Sprinkle the taco seasoning over the meat mixture. Stir well to ensure the seasoning coats everything evenly.
Add the black beans, corn, diced tomatoes, and diced green chilies to the pot.
Stir everything together.
Pour in the beef broth, and bring the soup to a simmer.
Let it simmer for about 20-30 minutes.
Ladle the Easy Taco Soup into bowls, and let your guests customize their bowls with an array of toppings like shredded cheese, dollops of sour cream, chopped green onions, fresh avocado, and/or some tortilla strips.
This taco soup can be eaten just as is or even over rice.
My favorite slow cooker is this 7qt manual Crock Pot. Set cooking time to high and get a hot meal in no time or set it on low and dinner can cook while you’re at work. It has an auto cut off, and yes, it goes to warm. One pot cooking means there are fewer dishes to clean, plus the lid and removable stoneware are dishwasher safe!
