It also is one of the few salads that will hold and is also great the next day and won’t get soggy!
Ingredients for the Dressing
1 cup Meyer Lemon Olive Oil
1 teaspoon cumin
Freshly ground pepper and salt
Ingredients for the Salad
6 cups kale, chopped or torn into small pieces
4 cups green cabbage, chopped
2 cups cucumbers, diced
2 cups celery, chopped
2 granny smith apples, sliced thin
1 cup pistachios, deshelled and chopped
1 cup roasted pumpkin seeds
Directions
Make the dressing by mixing the oil, balsamic vinegar, cumin and salt and pepper all together and set aside.
Prepare all your ingredients for assembly.
Add the kale, green cabbage, cucumbers, celery, apples, pistachios and pumpkin seeds all together in a bowl or large platter. Pour over your homemade dressing and toss all together.
Serve right away.
Time Saving Tip: I buy my kale and cabbage already chopped and prepared to save myself some time and I also buy my pistachios already deshelled and my seeds already roasted.
