Easy and delicious and guaranteed to impress everyone (even though they're super easy to make)!
Serves: 4 Prep Time: 15 minutes
Ingredients
2 lbs. mussels, cleaned 1 onion, chopped 2 tablespoons minced garlic 1 cup white wine 4 tomatoes, diced, or 2 cans of diced tomatoes 1 tablespoon garlic salt 1 can tomato paste Large bunch of fresh parsley, chopped 2 tablespoons olive oil
Directions
Saute the onions and garlic in olive oil.
Add the diced tomatoes and cook for another couple of minutes.
Stir in wine and bring to a low simmer.
Add mussels and cook until they open.
Add garlic salt, tomato paste, and fresh parsley.
Serve with pasta and/or fresh bread for dunking.
