Mussels in Tomato Broth

Easy and delicious and guaranteed to impress everyone (even though they're super easy to make)!

Serves: 4 Prep Time: 15 minutes

Mussels in Tomato Broth


2 lbs. mussels, cleaned 1 onion, chopped 2 tablespoons minced garlic 1 cup white wine 4 tomatoes, diced, or 2 cans of diced tomatoes 1 tablespoon garlic salt 1 can tomato paste Large bunch of fresh parsley, chopped 2 tablespoons olive oil


  1. Saute the onions and garlic in olive oil.

  2. Add the diced tomatoes and cook for another couple of minutes.

  3. Stir in wine and bring to a low simmer.

  4. Add mussels and cook until they open.

  5. Add garlic salt, tomato paste, and fresh parsley.

  6. Serve with pasta and/or fresh bread for dunking.
