Summer Sausage Sheet Pan Dinner

This recipe is not just an easy way to get dinner on the table, but it’s also delicious since you can take advantage of fresh summer vegetables when they are in season. I use lean chicken sausage, olive oil, and a load of vegetables in this recipe, so I feel like it’s on the lighter side and perfect for an easy dinner on a hot summer day.


Ingredients


2 zucchini, sliced

2 summer squash, sliced

1 large red onion, sliced

1 pound fresh green beans

4 sausage links, sliced

4 tablespoons olive oil

1 tablespoon dried oregano

1 tablespoon dried basil

salt and pepper


Directions

  1. Preheat the oven to 400 degrees.

  2. Prep all the vegetables and slice the sausage. (If you like the sausage a little more well done, like me then toss it into a frying pan first before putting it onto the sheet pan towards the end of baking time.)

  3. Toss everything with olive oil and seasonings and place onto a parchment sheet lined sheet pan.

  4. Roast in the oven for 20-30 minutes or until vegetables and sausage are cooked through.

  5. Serve warm.
