Ingredients
6 cups cubed and seeded watermelon
1 cup fresh mint leaves
3/4 cup crumbled feta cheese
3 whole limes, juiced
salt and pepper
1 tablespoon olive oil
Directions
Note: This salad is best made just prior to serving.
Cut up watermelon into cubes.
In a small bowl, whisk together olive oil, fresh lime juice, salt and pepper to make a dressing.
Place watermelon, feta cheese, and mint leaves together in a bowl or plate and then toss with dressing.
