Peach, Burrata & Prosciutto Caprese Salad

This is a fun play on the classic Caprese salad. The burrata replaces the mozzarella and peaches make a nice sub-in for the tomatoes.

Serves: 6

Prep Time: 20 minutes


4 tablespoons pine nuts

4 peaches

12 ounces burrata

2 packs of prosciutto

10 fresh basil leaves

salt & black pepper to taste


Layer the ingredients on a plate or in a bowl - however you choose.

The recipe really doesn't need dressing as the Burrata is so creamy but you can drizzle olive oil and balsamic to taste.
