There are a bunch of recipes out there for butternut squash pasta, but none are as simple as this one.

Cook Time: 30-45 mins
Ingredients
1 box of pasta
2 cups butternut squash, diced
1 pound bacon, crisped and chopped
1 small onion, chopped
3 tablespoons garlic, minced
1 handful fresh sage
2 tablespoons olive oil
4 tablespoons butter
salt and pepper
Parmesan cheese, shaved
Directions
Preheat oven to 350.
On a parchment-lined baking sheet, toss squash in olive oil and salt and pepper.
Roast for 20-30 minutes. Remove and set aside.
While the squash is roasting crisp the bacon in a large pot on the stove or in the oven on a baking sheet.
Boil the pasta and set aside.
In a large pot add the butter, onion, garlic, salt and pepper, and sage. Add the bacon and pasta and toss.
Add the butternut squash and gently toss so you don’t mush the squash and top with shaved Parmesan cheese.
