Roasted Zucchini Dip

This luscious, flavorful, roasted zucchini dip is a delicious way to use up your zucchini! Serve it up with vegetables, pita chips or crackers for a tasty, healthy appetizer.

Roasted Zucchini Dip

3-4 zucchini, trimmed and cut into pieces

2 tablespoons garlic, minced

4 tablespoons Olive Oil, plus more for serving

1 cup fresh basil

1 teaspoon black pepper

2 tablespoons lemon juice

For an extra kick of flavor, add a pinch of red pepper flakes to the dip. You can also try experimenting with different seasonings, such as smoked paprika or basil.

  1. Preheat oven to 400 degrees.

  2. On a parchment lined baking sheet, toss zucchini with 2 tablespoons olive oil, and toss to coat.

  3. Roast for 30 minutes.

  4. In a blender or food processor add the roasted zucchini, garlic, 2 tablespoons olive oil, black pepper, and lemon juice.

  5. Pulse to blend until mixture is reduced and velvety.

  6. Add salt, more lemon juice and/or olive oil to taste and consistency.

  7. Spoon into a bowl and serve with veggies and crackers.
