Scallop and Grapefruit Arugula Salad

Every year for Christmas clients will send grapefruits and oranges to the studios. Even if you’re not a huge fan of grapefruit (like myself) I would still recommend you try this super easy scallop salad.

Prep Time - 20 minutes

Serves 4


1 large grapefruit, peeled and sliced

12 large scallops

4 cups of arugula

For the champagne vinaigrette:

2 tablespoons olive oil

1 tablespoon champagne (or white) vinegar

2 tablespoons chopped onion

salt and pepper


  1. Peel, skin, and chop the grapefruit into pieces.

  2. In a small bowl mix together the ingredients for the dressing.

  3. Season scallops with salt and pepper and sauté in a pan on medium heat. Be careful not to overcook.

  4. Place arugula, grapefruit, and scallops onto a plate and drizzle with the champagne vinaigrette.
