Usually, I like to drink my vodka, but for this dish, I combined it with a perfect blend of pumpkin puree, milk, and tomatoes and left the ice in the freezer. It is the perfect one-pot pasta dinner that tastes like fall in a bowl!
Ingredients
1 box of pasta
6 ounces of tomato paste
1 can of pumpkin puree
1 onion, diced
2 tablespoons of garlic, minced
2 cups milk
1 cup parmesan cheese, shredded
1 cup vodka
1 tablespoon olive oil
1 tablespoon of red pepper flakes
Salt and pepper
Directions
Cook your pasta, drain, and set aside.
In a large pot sauté the onion, garlic, and olive oil until cooked.
Add in the tomato paste, pumpkin puree, vodka, red pepper flakes, salt and pepper, and cook for 15 minutes.
Add the milk, parmesan cheese, and the pasta and stir all together.
