Spinach, Garlic and Cheddar Quiche

Serves: 8

Prep Time: 15 minutes

Bake Time: 30-40 Minutes


1 prepared single pie crust

8-10 eggs

1 medium onion, chopped

2 cups fresh or frozen spinach, chopped

2 cups shredded cheddar cheese

2 tablespoons olive oil

2 tablespoons garlic, minced

salt and pepper


  1. Heat oven to 350.

  2. Put 1 tablespoon olive oil into a pie pan and put the pie crust in.

  3. In a pan, heat 1 tablespoon olive oil over medium heat.

  4. Add onion, spinach, and garlic; cook and stir until done.

  5. Whisk eggs, salt, and pepper until blended.

  6. Stir in cheese and sautéd spinach mixture.

  7. Dump into pie pan.

  8. Bake for 30-40 minutes until a knife inserted in the center comes out clean and the crust is golden brown.
