As winter melts away and stew season goes towards the back burner, it's time to celebrate the vibrant flavors and colors of spring with this Spring vegetable and apple salad.

I am taking in all the fresh and local produce I can get, starting with this spring vegetable salad. It is kind of like the light at the end of the tunnel (for those of us living in colder climates) and what a better way to do so than with a refreshing Spring Vegetable and Apple Salad, dressed in a zesty Lemon Dijon vinaigrette? This salad is a delightful medley of crisp, fresh vegetables and sweet-tart apples, perfectly complemented by the bright, tangy flavors of the homemade dressing.
Whether enjoyed as a light lunch, a refreshing side dish, or a vibrant starter to a springtime feast, this Shaved Vegetable and Apple Salad is sure to brighten up your table. This homemade Lemon Dijon vinaigrette is also on repeat all year long for me. It is impossible to mess up and all of the ingredients are hopefully always on hand in your fridge or pantry.

Ingredients
For the Salad
1 head purple cauliflower, chopped
1 head white (or yellow) cauliflower, chopped
2 cups snap peas, chopped
2 apples, sliced or cubed
1 small bunch of thinish asparagus, chopped into 1 inch pieces
2 cups celery, chopped
2 cups pistachios, unshelled
Freshly ground black pepper
Feel free to roast the cauliflower and asparagus if you don’t particularly like it raw. Toss with olive oil, salt and pepper and roast at 400 degrees for 10-15 minutes.

For the Dressing
1/2 cup olive oil
1/4 cup apple cider vinegar
3 tablespoons fresh lemon juice
4 tablespoons Dijon mustard
2 tablespoons maple syrup
Fresh ground black pepper
Directions
In a small bowl or mason jar with a top, combine the olive oil, apple cider vinegar, lemon juice, Dijon mustard, maple syrup and pepper.
Mix all together and store in the refrigerator.
In a large bowl combine the cauliflower, snap peas, apples, asparagus, celery and pistachios.
Just before serving, add the dressing and toss.
Season with pepper to taste and serve.
Fun fact: You can store this dressing in your refrigerator for up to one week.
