Summer Vegetable Pasta Salad

Prep Time - 30 minutes

Serves - 8

Serving Dish with pasts and Summer vegetables.


1 box of pasta of choice

1 cup cherry tomatoes, cut in half

1 cup zucchini, diced

1 cup red onion, diced

1 cup yellow squash, diced

6 tablespoons chipotle-infused olive oil

salt and pepper


  1. Cook pasta and let cool.

  2. Place in a serving dish.

  3. Cut all the vegetables up.

  4. Use two tablespoons of olive oil and sauté the zucchini and squash.

  5. Place the tomatoes, zucchini, red onion, and squash on top of the pasta and toss them all together with the remainder of the olive oil.

  6. Serve chilled or at room temperature.
