Blueberry & Lemon Bread

This blueberry and lemon bread is perfect for breakfast!

Blueberry & Lemon Bread

Ingredients

2 cups flour 1 tablespoon baking powder 3/4 cup sugarloaf 8 tablespoons melted unsalted butter 1/2 cup milk 3 eggs 1 tablespoon lemon juice 1 tablespoon grated lemon zest 1 tsp vanilla extract 2 cups fresh blueberries Pinch of salt Confectioners sugar for the top (if desired)

Directions
  1. Preheat the oven to 375 degrees.

  2. Mix everything together and add the blueberries last.

  3. Line a loaf pan with parchment paper

  4. Pour the batter into the loaf pan and shake gently to make sure it's even.

  5. Bake for 40-50 minutes or until a toothpick comes out clean.

  6. Top with extra blueberries if desired and sprinkle the top with confectioners sugar.
