Lemon Blueberry Baked Oatmeal Cups

When life hands you lemons...and it's blueberry season!

Serves: 6-8

Prep Time: 30 minutes

These lemon blueberry baked oatmeal cups are super easy and super healthy. I also got to use my “sword” as my 3-year-old nephew calls the zester that he got me as a birthday gift. They are ready in under an hour and they are vegan and gluten-free, too!


3 cups rolled oats 2 teaspoons baking powder 2 tablespoons ground flaxseed 2 cups unsweetened almond milk 1/3 cup maple syrup 4 tablespoons lemon juice 1 teaspoon vanilla extract 1 cup blueberries 1/2 cup mini dairy-free chocolate chips 3 tablespoons lemon zest


  1. Heat oven to 350 degrees.

  2. Mix everything together in a bowl.

  3. Prepare a muffin pan with cupcake liners and fill them with the batter almost to the top.

  4. Bake for 35 minutes.

Take out and enjoy or store for the week!
