Ingredients
1 favorite pie dough (store bought or homemade)
2 cups fresh or frozen peaches
1 cup fresh or frozen blueberries
1/3 cup sugar
1/4 cup flour
1 Tablespoon Blueberry Balsamic Vinegar
1 Tablespoon Peach Balsamic Vinegar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 egg white - optional
1 to 2 Tablespoons sugar in the raw - optional
Directions
Preheat oven to 350°.
Roll out pie dough into a 12-inch circle.
Place dough on parchment lined cookie sheet.
In a large bowl stir together peaches, blueberries, sugar, flour, vinegars, cinnamon, and salt.
Spoon fruit mixture onto center of pie dough, leaving an inch around edge.
Fold edge of pie dough overtop of fruit.
Brush pie dough with egg white and sprinkle sugar over fruit and pie dough if desired. Bake for 50-60 minutes or until dough is golden and fruit is bubbly.
Allow the galette to cool slightly before serving.
Enjoy warm or at room temperature, optionally topped with vanilla ice cream or a dollop of whipped cream.
