Pear Pecan Muffins

These Pear Pecan Muffins are perfect for a grab-and-go breakfast or afternoon snack.

Bake time 25-30 minutes



Ingredients



1 cup whole wheat flour

1/2 cup all-purpose flour

2/3 cup sugar

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground ginger

1 egg

1/2 cup oil (use apple sauce for a lighter option)

1 teaspoon vanilla extract

1 teaspoon grated lemon zest

2 cups chopped peeled pears

1/2 cup chopped pecans


** can use more cinnamon & ginger for a stronger spiced flavor


Directions
  1. Preheat oven to 350º.

  2. Grease or line 12 muffin cups with paper linings. Set aside.

  3. In a large bowl, combine the flours, sugar, baking soda, salt, cinnamon, and ginger.

  4. In another bowl, combine the eggs, oil, vanilla, and lemon zest; stir into dry ingredients until moistened. The batter will be very thick.

  5. Fold in pears and pecans. The juice from the pears will thin the batter a little.

  6. Fill muffin cups three-quarters full.

  7. Bake at 350º for 25-30 minutes or until muffins are golden and a toothpick comes out clean.

  8. Cool for 10 minutes before removing from the pan to wire racks.
