Pumpkin Apple Bread

Makes 2 loaves

Pumpkin Apple Bread


2 cups whole wheat flour

1-1/2 cups all-purpose flour

1-1/2 cups sugar

2 teaspoons baking soda

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/8 teaspoon cloves

1 - 15oz can pure pumpkin puree

1 cup water

1/2 cup oil

1/2 cup unsweetened applesauce

4 eggs

2 cups shredded peeled apples

1 cup chopped walnuts (*optional)

*This Pumpkin Apple Bread has a nice, lighter spice level. If you want it "spicier" add more cinnamon, nutmeg, and/or cloves.

  1. In a large bowl, combine flours, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.

  2. In a separate medium bowl, whisk the eggs.

  3. Add the water, oil, pumpkin, and applesauce to the eggs and stir until combined.

  4. Pour the pumpkin mixture into the dry ingredients and stir just until moistened.

  5. Fold in apples and walnuts.

  6. Spoon into two greased 8-1/2 in. x 4-1/2 in. x 2-1/2 in. loaf pans.

  7. Bake at 350º for 60-75 minutes or until golden brown and cooked in the center.

  8. Cool in pans for 10 minutes.

  9. Remove from the pan and cool on a wire rack.
