Zucchini Banana Bread

This breakfast bread is a great way to start the day and get in some fruits, nuts, and veggies!

Yields 2 Loaves

Zucchini Banana Bread


2 cups whole wheat flour

1 cup all-purpose flour

2 teaspoons ground cinnamon

1 teaspoon salt

1 teaspoon baking soda

1/2 teaspoon baking powder

1/8 teaspoon ground nutmeg

3 eggs

1 cup sugar

1/2 cup oil

2 teaspoons vanilla extract

2 bananas - mashed

2 cups shredded zucchini

1 cup chopped walnuts (*optional)

1 cup chocolate chips (*optional)

  1. Pre-heat oven to 350º

  2. In a medium bowl, combine flour, cinnamon, salt, baking soda, baking powder, and nutmeg; set aside.

  3. In a large bowl, lightly beat eggs; stir in sugar, oil, vanilla, and mashed bananas.

  4. Add dry ingredients; stir until moistened.

  5. Fold in zucchini.

  6. Fold in nuts and chocolate chips, if using.

  7. Spoon into two greased 8-1/2 in. x 4-1/2 in. x 2-1/2 in. loaf pans.

  8. Bake at 350º for 50-60 minutes or until golden brown and cooked in the center.

  9. Cool in pans for 10 minutes.

  10. Remove from the pans and cool on a wire rack.
