Sausage and Tuscan Kale Pasta

1 box of your favorite pasta

1 lb. of Italian sausage, uncased

5 cups Tuscan kale, washed, stemmed, and chopped (Buy a bag already pre-chopped to save time!)

2 tablespoons garlic, minced

2 tablespoons Italian seasoning

1 cup fresh Parmesan, grated

Olive oil


  1. Cook the pasta, drain, and set aside.

  2. In a large pan over medium heat, cook the sausage until browned and cooked through. Use a spatula to break it up into smaller pieces as it cooks.

  3. Remove any excess fat.

  4. Add the Tuscan kale, garlic, and Italian seasoning into the same pan and cook for 5-7 minutes or until the kale is wilted and tender.

  5. In a large bowl add the pasta and then dump the sausage and kale mixture on top.

  6. Drizzle 4-6 tablespoons olive oil on top of everything.

  7. Toss everything together and top with the fresh Parmesan.

  8. Serve hot or chilled.
